Beetroot Ravioli

Beetroot 1 nos
Cashew cheese 60 gm
Chopped red capsicum 10 gm
Chopped parsley 1 gm
Chopped celery 1 gm
Chopped dill leaves 1 gm
Oregano .05 gm
Salt .02 gm
Lemon juice few drops
Pepper .05 gm
Method:
- Mix all the ingredients together except beetroot
- Slice the 8 piece of beetroot slices in mandolin slicer
- Fill the cheese mixture on 4 slices of beetroot and cover with rest of the four slices
- Topped with little cheese and garnished with dill leaf or micro greens and serve
