Tomatoes Walnut Terrine with Celery Pesto

Ingredients:
Tomatoes 8 no( 320 gm scooped tomatoes)
Scoop out the tomatoes and keep at side
For Tomato Filling :
Walnut : 150gm
Cabbage chopped : 50gm
Carrot chopped : 70gm
Scallion chopped : 15gm
Onion chopped : 20gm
Green capsicum : 40 gm
Garlic chopped : 15gm
Oregano : 1 gm
Lemon : 15 gm
Pink salt : 3 g
Chopped parsley : 2 gm
Coarsely grind all ingredients except the lemon juice and parsley , finely add the lemon
juice, parsley and pulse once again
Stuffed in to scooped tomatoes and slice in to round slice and arrange on plate and
serve with celery pista pesto
For Celery Pista Pesto :
Celery cleaned : 60 gm
Almond soaked : 100 gm
Capsicum diced : 40 gm
Pistachio : 70 gm
Garlic cloves : 10 gm
Lemon : 15 gm
Rock salt : 3 gm
Method:
Blend the above ingredients until real smooth
