Wholesome Egg Meal

Ingredients:
- 1 tbsp Oil
- 1 tsp Garlic, chopped
- 1 Small Onion, chopped
- 2 Large Tomatoes, finely chopped
- ¼ Cup Tomato Puree
- ½ tsp Red Chili Powder
- 1 tsp Cumin powder
- A pinch of Sugar
- Salt & Black Pepper, to taste
- 3 Whole Eggs
- Few Spinach Leaves
- 3 Slices of Jalapeno
- ¼ Cup Crumbled Feta
Method:
- Heat oil in a pan. Saute garlic till fragrant.
- Add onion and cook till golden. Add tomatoes and cook till all mushy.
- Add in tomato puree and cook for more 2-3mins.
- Now add red chili powder, cumin powder, sugar and mix well.
- Season with salt and pepper.
- Lower the flame and spread the mixture on the pan evenly. Crack 3 eggs on top.
- Place some spinach leaves and jalapeno on top. Sprinkle some salt and pepper on top.
- Cover with lid and cook for 5-7mins.
- Turn off the flame, remove the lid and top it off with crumbled feta cheese.
- Serve hot with toasted bread.
