Cucumber Boat

Cucumber 160 gm
Chopped red capsicum 20 gm
Chopped yellow capsicum 10 gm
Chopped green capsicum 20 gm
Pepper 0.02 gm
Pineapple 50 gm
For Tender coconut Mayonnaise :
Cashew nuts 50 gm
Onion 0.10 gm
Garlic 0.05gm
Mustard power 0.01 gm
Lemon juice 10 ml
Salt 0.01 gm
Tender coconut meat 50 gm
Method:
- Blend all mayonnaise ingredients in a blender and grind in to smooth paste and keep.
- Cut the cucumber in to 3 inch size and cut in to two in lengthwise and scoop out canter part like boat
shape. - Mix the mayonnaise with chopped capsicum, pineapple, pepper and mix well and fill in to boat.
- Serve
