AUBERGINE AMARANTH SALAD

Ingredients
- 4-5 Aubergine, cut into long stripes
- 1 no mango, cut into small cubes
- 1⁄2 cup pomegranate
- 4-5 tbsp Amaranth, cooked
- 2 tbsp parsley, chopped
Dressing
- 1/4 cup soy yogurt
- 1⁄2 tsp cumin powder
- 1/4 tsp paprika/chili powder
- Salt as taste
Method
- Grill aubergine with little oil. keep aside
- Now add all other ingredients except aubergine to dressing
- Roll up grilled aubergine & mix stuff it with above mixture
- Serve immediately
