Ingredients

  • 4-5 Aubergine, cut into long stripes
  • 1 no mango, cut into small cubes
  • 1⁄2 cup pomegranate
  • 4-5 tbsp Amaranth, cooked
  • 2 tbsp parsley, chopped

Dressing

  • 1/4 cup soy yogurt
  • 1⁄2 tsp cumin powder
  • 1/4 tsp paprika/chili powder
  • Salt as taste

Method

  • Grill aubergine with little oil. keep aside
  • Now add all other ingredients except aubergine to dressing
  • Roll up grilled aubergine & mix stuff it with above mixture
  • Serve immediately
